Pumpkin Bread/Muffins

Pumpkin bread is a moist, spiced treat, bursting with warm autumn flavors and a subtle sweetness that makes it the perfect cozy fall dessert.
Servings 3 one-pound loaves
- 3 eggs well beaten
- 2 cups sugar
- 3 cups flour
- 1/2 tsp ground ginger
- 1/2 tsp allspice
- 3 tsp vanilla
- 1 tsp baking soda
- 1 cup oil
- 2 cups frozen mashed pumpkin fresh or thawed
- 3 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1 tsp salt
- 1/4 tsp baking powder
Mix liquid ingredients together and then add dry ingredients.
Bake in greased loaf pans for 1 hour at 350 degrees. Or bake in regular or mini muffin pans on 350 degrees for approximately 20 minutes. Time will vary with muffin size.
Bread/muffins are best when topped with cream cheese or vanilla frosting.
