
Chicken & Dumplings with Mashed Potatoes
Chicken and dumplings with mashed potatoes is a hearty, comforting dish where tender chicken and fluffy dumplings float in a rich, savory broth, perfectly paired with creamy mashed potatoes.
Ingredients
- 3 cups flour
- 1 tsp salt
- 3 tbsp shortening (butter flavored preferred)
- 1,2, or 3 lbs roasting chicken
Instructions
- Remove bag of giblets and place chicken in roaster – add salt, pepper, and about 2 cups of water.
- Roast in oven at 350 degrees for about 1 hour and 15 minutes – roast longer for larger chicken.
- When chicken is done, remove from roaster to platter. Add 2 more cups of water or water from potatoes.
- Set roaster on burner on stove, but do not boil until dumplings are ready. Add salt and pepper if needed.
- Mix well with hands. Add enough warm water to make a soft dough. Continue working dough by hand. Place dough on floured surface. Continue working dough until you have a soft ball of dough. let dough sit for about 15 – 20 minutes, covered.
- Uncover dough. Be sure to flour your rolling pin well. Roll dough as thin as possible and cut it into small squares – drop squares into boiling broth in roaster. Stir and coat until dumplings start to sink. Be careful they don't stick to the bottom of the roaster. If needed, make thickening of flour and warm water – stir with a fork to avoid lumps. Add slowly to broth and stir.
- If making homemade mashed potatoes, mash potatoes and cut the roasted chicken. Feel free to add a green vegetable (peas, green beans, etc. or a side salad. Sit down with your favorite people and enjoy!
