Pumpkin Bread/Muffins

Pumpkin bread is a moist, spiced treat, bursting with warm autumn flavors and a subtle sweetness that makes it the perfect cozy fall dessert.
Course Dessert
Servings 3 one-pound loaves

Ingredients
  

  • 3 eggs well beaten
  • 2 cups sugar
  • 3 cups flour
  • 1/2 tsp ground ginger
  • 1/2 tsp allspice
  • 3 tsp vanilla
  • 1 tsp baking soda
  • 1 cup oil
  • 2 cups frozen mashed pumpkin fresh or thawed
  • 3 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1 tsp salt
  • 1/4 tsp baking powder

Instructions
 

  • Mix liquid ingredients together and then add dry ingredients.
  • Bake in greased loaf pans for 1 hour at 350 degrees. Or bake in regular or mini muffin pans on 350 degrees for approximately 20 minutes. Time will vary with muffin size.
  • Bread/muffins are best when topped with cream cheese or vanilla frosting.
